Chewy Chocolate Chip Cookies: Our Recipe

Create gourmet cookies with Venchi's Easy Chocolate Chip Cookies recipe that’s simultaneously soft and chewy. There are a few essential steps that are not to be skipped if you would like to recreate the softness of these cookies: extra brown sugar, chilling the dough and melting the butter.   

Ingredients for Chocolate Chip Cookies 

  • 150g unsalted butter  

  • 140g brown sugar 

  • 80g white sugar  

  • 2 teaspoons vanilla extract  

  • 1 egg + 1 egg yolk  

  • 300g plain flour  

  • 1 teaspoon baking soda  

 

Quick and Easy Chocolate Chip Cookies  

  1. Preheat your oven to 170°C and cover a baking tray with parchment paper.  

  1. On the stove, gently melt the butter, brown sugar and white sugar until the butter is completely melted.  

  1. In a bowl, whisk together the egg, egg yolk, vanilla extract, and butter mixture, stopping when there are no lumps, and the texture is airy.  

  1. Add the flour and bicarbonate of soda, using a sieve to keep the dough light and fluffy. Mix the batter with a spatula, ensuring all the ingredients are well combined. Finally, stir the chocolate chunks and combine the dough into a rough ball.  

  1. Tightly wrap the cookie dough with cling film and leave it in the refrigerator to chill for about 1 hour, or at minimum 30 minutes.  

  1. Take the cookie dough from the refrigerator and let it sit for a few minutes until it's soft enough to shape. To form the cookies, measure out about 2 tablespoons of dough and roll it into a ball. Don't flatten them down too much so they'll be thick and chewy. Repeat with the remaining cookie dough.  

  1. Place the cookies onto the baking tray, spacing them about 5cm apart. Bake them in the oven for 12-14 minutes or until the edges are golden brown.  

  1. Leave the cookies to cool on the baking tray for a few minutes, then move them to a cooling rack. After they've cooled for 10 minutes, these chewy choc chip biscuits are ready to be eaten.  

  

Tips for Soft and Chewy Cookies  

Below are a few secrets to achieving chewy and soft choc chip biscuits: 

  • Brown sugar: our recipe calls for more brown sugar than white because it will help make your cookies irresistibly soft thanks to the extra moisture and molasses that brown sugar naturally contains.  

  • Melt the butter and sugar: melting the butter and sugar together on the stove is an added step in our recipe that will help create a gooey centre and softer final cookie. It also ensures that the sugar is dissolved and smooth already before baking.  

  • Chill the cookie dough: let your cookie dough rest for 1 hour in the refrigerator before baking. This essential step helps bring out the flavours even more and evaporates the liquid from the dough, leaving a higher ratio of brown sugar, making the cookie chewier.  

  • Don't overbake the cookies: once your cookies are in the oven, keep a close eye on them. The edges should be a light golden brown, and the middle should still be soft.  

 

Delicious Add-Ins and Flavour Twists 

The great thing about Venchi's Choc Chip Cookies recipe is that you can create many different cookies with a few flavour swap-outs.  

  • Chocolate chip hazelnut cookies: increase the depth of flavour by adding ½ cup of chopped hazelnuts or walnuts to this recipe.  

  • Banana and chocolate chip cookies: create a delicious mix between chocolate chip cookies and banana bread by adding 1 ripe banana to Venchi's recipe.  

  • White chocolate and macadamia cookies: choose a classic combination of white chocolate chips and macadamias for a creamier take on our cookies.
