Easy Chocolate Covered Strawberries

Discover Venchi's Easy Chocolate Covered Strawberries recipe: ideal for celebrations and romantic nights in. This simple dessert delivers the wow factor, balancing the sweetness of strawberries with the sophistication of dark chocolate.

We've elevated the elegant look of this recipe by using tempered chocolate, which creates a dark chocolate coating that's glossy and hard, even at room temperature.

Ingredients for Chocolate Covered Strawberries

  • 280g dark chocolate

  • 500g fresh strawberries, stems attached.

How to Make Chocolate Covered Strawberries Step by Step

  1. Prepare the strawberries: wash and dry the strawberries really well.

  2. Prepare the toppings: put any toppings you'll use on small plates. Cover a baking tray with parchment paper; it's where you'll place the chocolate-dipped strawberries.

  3. Create a double boiler, by filling a saucepan half-full of water and bringing it to a simmer.

  4. Temper the chocolate: break up 2/3 of the dark chocolate and put it in a heatproof bowl that fits on top of the saucepan, making sure that not even a droplet of water touches the chocolate.

  5. Continuously stir the chocolate until it's fully melted and smooth.

  1. Take the melted chocolate from the heat and place it on a tea towel, then add the remaining 1/3 of the chocolate and slowly stir until melted. Test the chocolate's temperature by dabbing it again on your wrist; it should feel cool.

  2. Dip the strawberry into the melted chocolate by holding it by its stem. Gently swirl the strawberry around and let any excess chocolate fall off.

  3. Dip into any extra toppings; otherwise, place the chocolate-dipped strawberry onto the parchment paper and leave for a few minutes to set.

Best Chocolate for Dipping Strawberries

High-end dark chocolate is the best kind of chocolate for dipping strawberries because it has a deep flavour, and when melted, it will become silky smooth. When choosing your dark chocolate, look for considerable amounts of cocoa butter and 50-60% cocoa to achieve the perfect level of intensity and bitterness for this recipe.

How to Store Chocolate Covered Strawberries

Chocolate-covered strawberries are at their best when eaten the same day they are made, yet they can last up to 1-2 days, depending on the freshness of the strawberries. Before you are ready to serve them, you can keep them uncovered on the kitchen counter, making sure to avoid any sunlight or heat.

If you want to keep your strawberries longer, you can place them in the refrigerator for a few more days, storing them on a plate uncovered to avoid condensation. Sadly, chocolate-dipped strawberries cannot be frozen; you will be left with a mushy mess.

Some Tips and Variants

Below are some essential tips that will help you create showstopping dark chocolate-covered strawberries:

  • Use the best strawberries: they should be firm yet sweet, so look for strawberries that are not white at the top.

  • Completely dry the strawberries before dipping: you should use room temperature strawberries, wash them thoroughly and then ensure they are 100% dry. This will help the chocolate stick to the berries without any hassles.

  • Temper the dark chocolate: to ensure a crispy chocolate coating that snaps to the bite, dark chocolate must be tempered. We have simplified this chef's technique and removed the need for a food thermometer, making it easier to follow.
