The Traditional Italian Tiramisu Recipe

Serve up a slice of Italy from your kitchen with Venchi's Classic Tiramisu recipe that features espresso-dipped ladyfingers covered with airy mascarpone cream and a generous dusting of cocoa powder to deliver the chocolate flavour. This dessert is light, thanks to the whipped mascarpone layers and the delicate sponge of the biscuits.  

The ingredients for tiramisu

  • 28 ladyfinger biscuits  

  • 4 eggs, separated  

  • 200g granulated sugar  

  • 4 tablespoons of rum  

  • 450g mascarpone  

  • 1 cup strong coffee  

  • 1 teaspoon vanilla extract 

  • 22g cocoa powder 

  • cocoa powder (for dusting)  

 

Step by step instructions and tips

  1. Stir the coffee, cocoa powder and 2 tablespoons of rum in a bowl until combined and set aside.  

  1. Put the egg yolks into one bowl and the egg whites in another.  

  1. Use an electric mixer to whisk the egg whites while slowly adding half the sugar. You can stop whisking once stiff peaks have formed, then set aside.  

  1. Next, start to beat the egg yolks and slowly add the remainder of the sugar. It's ready when the mixture is fluffy and pale yellow.  

  1. To the egg yolk mixture, stir in the mascarpone, vanilla extract and 2 tablespoons of rum until the ingredients are well combined.  

  1. Gently fold the egg yolk mixture into the egg whites using a spatula. Be careful not to overmix so you don't lose the air in the egg whites.  

  1. Dip each side of the ladyfinger into the coffee, making sure to work quickly. Then, place the ladyfingers into a single layer in a 25-centimetre baking dish.  

  1. Pour about half the mascarpone mixture on top of the ladyfingers, smoothing the cream into an even layer. Then, place another layer of espresso-dipped ladyfingers on top of the mascarpone layer. Finish off with the remaining mascarpone and use a spatula to smooth it out.  

  1. Before serving, generously dust the tiramisu with cocoa powder.

How to give your tiramisu that extra touch

The original Italian tiramisu recipe is truly loved, and so it can be challenging to replicate its special magic at home. Here are a few pivotal tips to remember that will add an extra touch of flavour to your homemade dessert.  

  • Choose high-quality ingredients: especially because the eggs are not baked, we recommend farm-fresh eggs that will deliver extra fluffiness.  

  • Brew the coffee strong: coffee is the big, bold flavour in tiramisu. So, make sure it doesn't get overpowered by the other ingredients and brew a strong batch. It's best to use a French Press or use espresso shots. If you love coffee, try other easy recipes like our Affogato

  • Work quickly with the ladyfingers and coffee: you'll want to keep the ladyfinger biscuits slightly crisp to help balance the creaminess of the mascarpone. To achieve this, work swiftly because these biscuits can get soggy.  

  • Give plenty of time for the tiramisu to set: tiramisu should be kept in the fridge for at least 4 hours before serving to ensure the dessert holds its shape. If you have the time, leaving your tiramisu in the refrigerator overnight will produce the best results.  

 

How to Freeze Tiramisu 

If you would like an irresistible traditional tiramisu, it's best to make it fresh. However, you don't always have the luxury of that option, so we've shared our tips for how to freeze tiramisu.  

  1. Follow Venchi's classic tiramisu recipe until the last step, so don't dust the top layer of mascarpone with cocoa powder.  

  1. Tightly wrap the tiramisu using cling film or place it in a freezer-safe container.  

  1. You can leave it in the freezer for up to 3 months. When you would like to serve the tiramisu, put it in the fridge overnight to defrost and then dust it with cocoa powder.
